Fire- Roasted Tomato Goat Cheese Alfredo


  • 2 Tbls. Oliva! Organic Basil Olive Oil or any fruity EVOO
  • 1 Tbls. Victoria Taylor’s Fire- Roasted Tomatoes
  • 1 small shallot, finely chopped
  • 1-2 cloves garlic, chopped
  • 1 cup half and half
  • 4 ounces goat cheese (garlic and herb if desired)
  • 2/3 cup parmesan cheese


  1. In a medium saucepan, heat 2 Tbls. Oliva! Organic Basil Olive Oil.
  2. Sautee shallots and onions until tender.
  3. Add half & half and goat cheese. Cook until cheese in melted and incorporated with other ingredients. Season with Victoria Taylor’s Fire- Roasted Tomatoes.
  4. Add parmesan cheese.
  5. Cook pasta of choice, al dente

Serve over pasta or as a great dipping sauce for crusty bread.

Top with freshly chopped parsley if desired.
