- 2 Tbls. Oliva! Organic Basil Olive Oil or any fruity EVOO
- 1 Tbls. Victoria Taylor’s Fire- Roasted Tomatoes
- 1 small shallot, finely chopped
- 1-2 cloves garlic, chopped
- 1 cup half and half
- 4 ounces goat cheese (garlic and herb if desired)
- 2/3 cup parmesan cheese
- In a medium saucepan, heat 2 Tbls. Oliva! Organic Basil Olive Oil.
- Sautee shallots and onions until tender.
- Add half & half and goat cheese. Cook until cheese in melted and incorporated with other ingredients. Season with Victoria Taylor’s Fire- Roasted Tomatoes.
- Add parmesan cheese.
- Cook pasta of choice, al dente
Serve over pasta or as a great dipping sauce for crusty bread.
Top with freshly chopped parsley if desired.
