Lemon Olive Oil Cake

Oliva! EVOO Lemon Olive Oil Cake

 3 large eggs
 1 ¼ cups granulated sugar,
 1 ¼ cups milk
 ¼ cup cognac
 ¼ cup orange juice
 zest of one orange
 2 cups all purpose flour
 ½ tsp baking soda
 ½ tsp baking powder
 2 tsp cinnamon
 ½ tsp cloves
 1 tsp salt

Preheat oven to 350°F.
Oil a 10 inch round cake pan with a drizzle of Olíva! Lemon Olive Oil.
Dust with flour for easy removal when the cake is done.

Whisk together the eggs and olive oil until combined.
Slowly add the sugar and whisk until incorporated.
Add the milk, cognac, orange juice, and orange zest and continue whisking.

In a separate large bowl, mix the dry ingredients:
flour, baking soda, baking powder, cinnamon, cloves and salt.
Make a well in the center.
Slowly add the wet mixture whisking until batter is completely smooth.

Pour the batter into the cake pan (it will be filled almost to the rim of the pan).
Sprinkle an additional tbsp. of sugar on top.

Bake for 50 - 60 minutes.
Test the doneness of the cake by inserting a toothpick into the center.
Once cooled, finish with a dusting of confectioners sugar over the top.
