Olive Oil Cake

 3 large eggs
 1 ¼ cups granulated sugar
 1 ¼ cups milk
 ¼ cup cognac
 ¼ cup orange juice, fresh is best
 zest of 1 orange
 2 cups all purpose flour
 ½ tsp baking soda
 ½ tsp baking powder
 2 tsp cinnamon
 ½ tsp ground cloves
 1 tsp salt

Preheat oven to 350°F. Coat a 10 inch round cake pan and lightly dust with a layer of flour. Set aside for later.

Whisk the eggs in a large bowl. Add the Olíva! EVOO & Lemon Olive Oil until fully combined. Add the sugar and mix to incorporate. Next add the milk, cognac, orange juice & zest. Whisk again until combined.

In a separate bowl, mix the dry ingredients together. Flour, baking soda, baking powder, cinnamon, cloves and salt. Push dry ingredients to outer edges of the bowl creating a well in the center.

Slowly pour in the olive oil mix and continue whisking until the batter is smooth. Pour into your oiled and flour dusted pan. Give it a few taps on the counter to let any air bubbles rise to the top. Sprinkle the top with an additional tbsp of sugar. Bake for 50 - 60 minutes, check doneness by inserting a toothpick or knife into the center. If it comes out clean, it's done!

Serve with homemade whipped cream and fresh berries!
